Nuts about Coconut and Rice?

Then try Coconut Rice Pudding. Not only does this taste amazing, it is the best breastfeeding food ever (in my opinion:)!!

I grew up with a mother who cooked for us from scratch. Whole foods would be the word for it now, for mum it was just what she did. I didn’t have a takeaway until I was in college and looking back now I realise how lucky we were….I’m sure, in fact I know, back then there were many grumbles from the teenage me, lots of sitting at the table until all my dinner was finished. The good part was there was always dessert, it may have taken me a while to eat the main meal depending on what it was but I always got there simply to have dessert. I have a sweet tooth!

I don’t know how my mum did it. Running a busy bed and breakfast all by herself and still getting dinner on the table for all of us. I have so much more appreciation since becoming a mother myself.

One of these yummy home cooked desserts used to be rice pudding. She made it the traditional style and I had totally forgotten about this type of desert until I found myself off chocolate and gluten due to breastfeeding a windy newborn. The problem was I was still craving something sweet!

I came across a recipe for coconut rice pudding so decided to give it a go with a few Daphne adaptions…..ask my husband about Daphne adaptions…I’ll admit, he’s not a fan😂.

This time though, it was delicious…not that there was any left for him:)  I thought it was so delicious that I needed to share it (I hope it lives up to its expectations). This creamy, sweet rice pudding is also great for breastfeeding mums – sweet, sugar free, gluten free & filling! In fact great for anyone who loves coconut and rice:)!!

Here it is:



100g white long-grain rice
2 dessert spoons raw honey
1 teaspoon vanilla extract
240ml coconut cream*
240ml water * (just fill the same tin as the cream)
200ml full-fat milk

*instead of the cream and water you could just use 500ml coconut milk

I find the Ayam coconut cream to be the best as it has the minimum additions to it.  Check the ingredients of your coconut milks/creams… many of them have stuff added!!


Rinse the rice under cold running water. Place in a saucepan with the honey, vanilla, coconut cream/milk and full-fat milk. Bring to the boil, stirring. Reduce heat to very low and simmer for 1 hour, stirring occasionally.
